Old-Fashioned Coca-Cola Cake

Ingredients
Cake
- 2 Cans Coca-Cola 12 oz regular Coke – divided
- 1 Cup Salted butter
- ½ Cup Unsweetened cocoa powder
- 2 Cups All purpose flour
- 2 Cups Granulated sugar
- 1 tsp Baking soda
- ½ tsp Salt
- 2 Eggs
- ½ Cup Buttermilk Room Temp
- 1 tsp Vanilla extract
Frosting
- ½ Cup Reduced Coca-Cola From above
- ½ Cup Salted butter
- 1 tsp Vanilla extract
- ½ Cup Unsweetened cocoa powder
- 4 Cups Powdered sugar Sifted
Instructions
Prep
- In medium sauce pan, simmer both cans of Coca-Cola over medium heat until it is reduced to about 1 cup. Measure out ½ cup and set aside for the frosting.
- Preheat oven to 350℉ and prepare 9×13 baking dish with non-stick spray.
Cake
- Add butter and cocoa powder to the the remaining reduced cola in the pan over medium heat until the butter is melted and the cocoa is dissolved.
- Remove from heat and cool for 5 minutes.
- In a large bowl, whisk together the sugar, flow, baking soda, and salt until incorporated.
- Once cooled, add the cola mixture to the flour mixture.
- Add the eggs, buttermilk, and vanilla and use and electric mixer on medium until well combined. This will make a thin batter.
- Pour the cake batter into the prepared pan.
- Bake for ~25-30 minutes or until a probe comes out clean.
Frosting
- While the cake is baking, return the ½ cup of reduced cola to the saucepan along with butter, cocoa powder, and vanilla.
- Set pan over medium heat and whisk until the butter is fully melted and mixture is smooth.
- Remove from heat.
- Sift in the powdered sugar ½ cup at a time, whisking until dissolved. Repeat until all the powdered sugar has been added.
- Pour the frosting over the cake while both are still warm.
- Allow the cake to cook and the frosting to set up before serving.
