Sweet Potato-Apple Bake
Equipment
- Crock pot
Ingredients
- 4 Sweet potatoes Chopped
- ½ Cup Butter
- 4 Tart apples Peeled, cored, & chopped – I use Granny Smith°
- ⅓ Cup Sugar
- ⅓ Cup Brown sugar
- 2 tsp Cinnamon
- ⅓ Cup Water
- ¼ Cup Lemon juice
- ¼ Cup Orange juice
- ½ Cup Cranberries Chopped
Instructions
- Microwave sweet potatoes for about 1.5 minutes to warm and soften them and it will be easier to chop them up.
- Chop up the apples and sprinkle with some of the lemon juice to keep them from browning.
- In a bowl, mix together brown sugar, sugar, and cinnamon and set aside.
- Arrange a layer of the sliced/chopped sweet potatoes. Dot with butter and sprinkle with some of the sugar mixture.
- Arrange a layer of apple chunks on top of sweet potatoes. Dot with butter and sprinkle with some of the sugar mixture.
- Continue to layer ingredients until they are all used.
- Top with chopped cranberries and any unused sugar mixture.
- Combine the water and juices and sprinkle over top.
- Cover crock pot and put on medium and cook until everything is tender.
Notes
If you do not have the time to slow cook this, you can use Wendy’s original instruction.
Boil the sweet potatoes instead of microwaving them. Use a 9×13 baking dish and cook at 400F for 45 minutes. Wendy also had 1/2 cup of white and brown sugar, and no cranberries. I like the added tartness of the cranberries and less sugar.
