Kristen has made this for a few of our camping trips and it comes out fantastic. I will usually heat this up on a small gas stove or grill, but it works very well over a low fire or coals (with indirect heat).
Camping Mac & Cheese
Easy make ahead M&C to cook over a fire.
Servings: 4
Calories: 448kcal
Equipment
- Aliminium pans
- Aluminiun foil
- Nonstick cooking spray
Ingredients
- 1-½ Cup Macaroni
- 8 oz Alredo sauce (about ½ jar)
- ½ Cup Cheddar cheese Grated
- ½ Cup Parmesesan cheese Grated
- ¼ Cup Mozzarella cheese Grated
- ⅓ Cup Milk or half & half
- Salt and pepper to taste
Instructions
Prep before camping trip
- Cook pasta according to package directions. Drain and rinse with cold water.
- Stir in Alfredo sauce, three cheeses, and enough milk to keep it 'loosey goosey'. (This will keep it from drying out while keeping it cool)
- Stir in salt and pepper to taste.
- Spray pie pan (or 4 smaller pans for individual servings) with nonstick cooking spray. Also spray one side of the aluminium foil to cover the servings.
- Spoon in mac & cheese mixture and seal pan(s).
- Place in refridgerator or cooler until ready to use.
Cooking time
- Prepare fire and let it burn down to coals. (I used a small table top grill with great success).
- Place a cooking rack about 2-3 inches above coals.
- Place pans over hot coals and cook for 8-10 minues or until hot.
- Remove from fire and serve.
