Light Corn Bread
One of my favorites from A Skillet Full
Equipment
- 10" Cast iron skillet
Ingredients
- 4 Tbsp Shortening or bacon grease Butter will do in a pinch
- 2 Cups White cornmeal I use yellow sometimes
- ½ Cup All purpose flour
- ½ Cup Sugar
- ⅔ tsp Baking soda
- 2 tsp Baking powder
- 1 tsp Salt
- 2 Cups Buttermilk
Instructions
- Put skillet with shortening into the oven while preheating to 350°.
- Soft all of the dry ingredients together in a glass mixing bowl.
- Mix in buttermilk.
- Remove hot skillet from oven and pour hot shortening into batter.
- Pour batter into hot skillet.
- Bake for about 1 hour. (I always check at about 45 minutes and turn to keep it even)
