Light Corn Bread

Equipment

  • 10" Cast iron skillet

Ingredients

  • 4 Tbsp Shortening or bacon grease Butter will do in a pinch
  • 2 Cups White cornmeal I use yellow sometimes
  • ½ Cup All purpose flour
  • ½ Cup Sugar
  • tsp Baking soda
  • 2 tsp Baking powder
  • 1 tsp Salt
  • 2 Cups Buttermilk

Instructions

  • Put skillet with shortening into the oven while preheating to 350°.
  • Soft all of the dry ingredients together in a glass mixing bowl.
  • Mix in buttermilk.
  • Remove hot skillet from oven and pour hot shortening into batter.
  • Pour batter into hot skillet.
  • Bake for about 1 hour. (I always check at about 45 minutes and turn to keep it even)
