Napoli Casserole

Equipment

  • 9×13 Baking dish (3 quart)

Ingredients

  • 4 Tbsp Butter
  • 4 Tbsp Flour
  • 2 Cup Milk
  • 1 tsp Salt
  • 2 Cup Mozzarella Shredded
  • 1 lb Italian sausage Either hot or mild
  • 2 Cup Orange/Yellow peppers Chopped
  • ½ Cup Onion Chopped
  • 1 Cup Tomatoes Chopped
  • 4 Cup Bow tie pasta Cook this ahead of time

Instructions

Make white sauce

  • In medium pot, melt butter over medium-low heat.
  • Stir in flour and stir continuously to make a roux.
  • Add milk in parts and whisk until it thickens.
  • Remove from heat and add salt and 1 cup of the shredded cheese.

Prep sausage and vegetables

  • Remove sausage from casings, and cut into chunks.
  • Put in skillet over medium-high heat and brown.
  • Add in peppers and onions and cook until tender.

Bring it all together

  • Preheat oven to 350°.
  • Take sausage and vegetable mixture and stir in sauce and the 4 cups of precooked pasta.
  • Pour into a greased casserole dish and top with remaining cheese.
  • Bake for 20-30 minutes or until cheese starts to brown.
